Mrs. Susong's Spaghettina Culls Palates

When you're entertaining a group informally for a meal, a simple dish well cooked will be more eagerly received than all the fussy salads or bedecked meats. Mrs. Charles Susong, one of Coral Gables' busiest women and prominently identified with civic groups, concocts an "Italian spaghetti" dish her three grown children and husband clamor for on any occasion. Mrs. Susong says this dish is a favorite if the group happens to be her son's (Charles, Jr.) fraternity classmates, Beta Theta Pi, at the University of Florida, or her younger daughter's (Jeanne) little sorority, Pi Beta Nu, at Ponce de Leon High School. The only deviation Mrs. Susong makes is to use butter where the recipe calls for salad oil, for her family "just doesn't like oil." The recipe is as follows ITALIAN SPAGHETTINA 8 onions chopped 8 green peppers chopped 2 cloves of garlic chopped 2 small cans of pimientos 1 can tomatoes 1 can tomato paste 2 medium cans mushrooms (stems and pieces) 3 pounds beef ground Salt and pepper 1 cup olive oil (or 1/2 pound of butter melted) Brown beef in butter, add all other chopped ingredients except mushrooms. Simmer three hours or longer. Mrs. Susong says the longer it is cooked at this stage the better. Add mushrooms one-half hour before finished. Serve over two boxes of freshly-cooked spaghettina. The recipe makes a large quantity of meat sauce, the "touch" to the dish.

Windows Now Serve Decorative As Well As Functional Use

Windows of home are no longer viewed solely as functional units. Today they are called upon to serve important architectural and decorative uses as well. One interesting modern result is achieved by placing a prominent window to frame a tree in the manner of a "living picture." Its changing pattern from spring to fall and throughout the winter makes a refreshing scene. Similar pleasing effects are obtained if the landscape permits a view of a river reach, a winding creek or even a broad expanse of rolling land. Together with other functional parts of the modern small house, windows have improved considerably in design and construction. Officials of the Federal Housing Administration explain that wisely chosen windows improve the exterior appearance of the house and add cheer to the interior. Window styles which families building homes under the FHA plan may choose include double hung and casement windows which move up and down and casement windows hinged at the side and opening in and out. Bay windows are available in many sizes and attractive styles. Dormer windows can be used to lighten attics or bedrooms under the roof. Where wall space is at a premium the use of corner windows is often advantageous. Careful thought should be given, FHA officials advise, to the placing of windows to obtain an attractive exterior appearance and also to assure wall spaces in living rooms for convenient location of furniture. The glass area should be sufficient to insure good light and ventilation in proportion to the size and character of the room.

Home Questions Are Answered

Q. How are FHA-insured mortgage loans repaid? A. In monthly installments. The size of the payment and the length of repayment time depend to some extent on how much the borrower can afford to pay regularly out of income. Q. When must an application be made for an FHA-insured mortgage loan on a new home? A. The application must be submitted and plans approved before construction is started. Q. Should there be any special difference in plan between houses built in a northern or southern climate? A. In the north houses are usually built with a compact plan which makes them more easily and economically heated in winter weather. Living rooms should be located to receive as much sunlight as possible, and protection should be provided against cold winter winds by means of buildings, trees, or storm sash. In the south cross ventilation is more important for comfort than economy in heating. A compact plan is less essential and houses should be designed and located to take advantage of the prevailing summer winds. Protection from the sun may be obtained through the use of trees, window blinds, awnings or other means.

Cake Tip

Next time you make pineapple upside-down cake, use one of the prepared gingerbread mixtures instead of cake batter called for in the recipe. Bake and top with ice cold unsweetened whipped cream for a rich and eye-filling dessert.

Coolness Is the Keynote to These Dessert Recipes

Are you striving for an effect in coolness in your summer meals? If so, there's nothing like a gossamer sheer dessert to climax the hot-weather and finish the meal on a note of cool satisfaction. Candidates for the job are two hot weather dessert recipes given here. One is a chilled French berry pie, porous pastry over a light cream filling; the other is a pineapple julep cake -sponge cake with a fluffy pineapple mint filling. Both are prepared with a creamy custard base which results from just a few moments' work if made on a modern electric range, equipped as it is with a controlled low heat switch that cooks custards perfectly without the slightest danger of curdling. These saucepan custards, moreover can be made entirely without benefit of double boiler-a fact which saves time, temper and dishwashing on a hot day. One pint of fresh strawberries or raspberries is needed for the French berry pie and here is the recipe: French Berry Pie (Makes one 9-inch pie) 1 9-inch baked pie shell 1/4 cups milk 1/3 cup sugar 5 tablespoons flour 1/8 teaspoon salt 2 eggs 1/2 teaspoon vanilla 1 tablespoon butter 1 pint strawberries or raspberries Bake pie shell and set aside to cool. Scald milk in saucepan on electric surface unit, using medium heat. Blend one-half cup of the sugar with the flour and salt, and add this mixture slowly to the hot milk. Cook, stirring constantly until the mixture thickens (about 8 minutes). Separate eggs and beat yolks slightly. Pour a little of the hot mixture over them. Return to saucepan and cook two more minutes over low heat. Remove from unit, add vanilla and butter and cool slightly. Meanwhile, beat egg whites until frothy, add one-quarter cup of sugar slowly and continue beating until a stiff meringue is formed. Fold this into the cooked mixture. Slice berries in half lengthwise (reserving one-half cup) and with the sliced berries mix one-half cup sugar, 2 table-spoons cornstarch and 3 table-spoons water. Cook over medium heat until thick, stirring con-stantly. Continue cooking 12 minutes more, or until clear. Cool and mix lightly with fresh berries. Arrange over cream filling and chill. Pineapple Julep Cake 1 sponge cake (baked in 9-inch angel food pan) 2 eggs 6 tablespoons sugar 1 8 1/2-ounce can crushed pineapple 1 tablespoon unflavored gelatin 1/4 tablespoon salt 1 tablespoon fresh mint (finely chopped Cut a crosswise section about one-half inch deep off the top of your favorite sponge cake. Then cut two circular rings descending down into the cake, one of them one-half inch from the outside and one one-half inch from the center of the cake. Be careful not to cut through the bottom crust. Pull out the center piece, this leaving a circular mold of cake to hold the filling. Separate eggs and beat yolks until thick. Continue beating while adding 3 tablespoons sugar gradually. Drain crushed pineapple and add 3 tablespoons pineapple juice to egg mixture. Place in small saucepan on surface unit of electric range. Use low heat and cook, stirring constantly, until mixture is thick and creamy. Soak unflavored gelatin in 1 tablespoon of the pineapple juice for 5 minutes. Combine dissolved gelatin and salt with egg yolk mixture and cool. Beat egg whites until frothy; add the remaining 3 tablespoons sugar and beat until a stiff meringue is formed. Add crushed pineapple and mint, (if desired). Fold meringue into custard mixture and pour into cake. Replace top layer of cake and chill until filling is firm. Serve with sweetened whipped cream if desired.

The thermos jugs, with their wide mouths, do double duty, for besides keeping cold things cold and hot beverages hot, they can also be used for salads and hot dishes. "STAY DRI" IS THE MODERN WAY of saying goodbye to mildew. Canisters of the absorb-ent chemical, placed in saucers on the floor of closets where clothes are stored, sponges up the moisture from the air and thus eliminates dampness and its companion, mildew. Home Preservation of Foods Is Aim Of Dade County Defense Classes

Can you can? If you can't, you may learn, this fall right here in Miami, free of charge. The home and community service division of the Dade County Defense Council will sponsor a series of classes in home preservation of foods, for all women of Dade County. The classes will be held at various points in the county, once or twice a week, for several weeks. All steps in the "lost art" of canning will be taken up and discussed by certified teachers of home economics. The defense council is sponsoring the project to encourage housewives to learn the useful skill, in order to relieve transportation of food problems, to prevent waste of surplus food crops, and to relieve demands on food supplies needed for shipment abroad. This fall, when the classes start early in September, there will be many fresh vegetables on the market, suitable for preserving. Among them will be beans, tomatoes, spinach, carrots, beets and fruits. If you want to cut down on the food budget, here is a fine starting place. Start saving good, large mayonnaise and pickle jars, which have enough grooves for a tight screw top. Figure out what foods your family enjoys and plan to preserve enough of these foods to see you through the winter. It will save you money and it will aid in the national defense program of conservation. Perhaps you know how to preserve foods. If so, fine! But if you are willing to learn, register this week for the course. Defense chairmen of each women's organization will take registrations. If you are a business woman, you may take the course during evenings. Ed M. Amsden, manager of the Gables Theatre, Coconut Grove, has returned from Sarasota, where he spent most of his vacation visiting members of his family. He also did some fishing while on the West Coast.

This Is Good

If your family likes old-fashioned ice cream enough to turn the freezer, here's a recipe that's nourishing and good, but which costs less than a similar amount of "boughten" ice cream: Beat from eight to a dozen eggs with a rotary beater and add one can Eagle Brand condensed milk and one-half pint of heavy cream. Beat until ingredients are well mixed and your ice cream base is ready for flavoring. Mash fresh ripe peaches with sugar before adding and simmer blueberries with sugar for a minute and cooled before combining for blueberry ice cream. If ou're using fresh pineapple as flavoring, cook it too with sugar. A can of Hershey's chocolate syrup added to the base with half a cup of sugar makes a delicious chocolate ice cream. The flavors of fresh fruits will be heightened by a dash of lemon or lime juice. Pour flavored ice cream mixture into a four-quart freezer and add milk to fill the container three-quarters full. Then get your crew busy churning!
