Diary of a Beauty Authority

NEW YORK-No one has ever decided which is more important to a woman's appearance-her face or her figure, and when you come right down to it, I guess both are equally important. Certainly no woman would ever be considered a beauty-even with the loveliest face and complexion-if she were too fat. All the great beauties of history have been slender, the prettiest clothes are designed for slender women-and, as a matter of fact, a slim figure is important today, not only for looks, but for vitality, too. Mrs. Hamilton came into my private consultation room yesterday looking twenty pounds heavier than when I last saw her. "Look at me," she wailed. "Too many dinner parties and charity luncheons. You know the desserts they serve. How am I ever going to return to a size 14?" I prescribed for Mrs. Hamilton a scientific program consisting of my Seven-Day Diet and exercise and, if she follows it faithfully, she will be a sylph in a few weeks. If women would only realize the importance of "food for beauty," there would never be any overweight, listless women. Proper food brings slenderness, health and the sparkle in the eyes and spring in the step that comes real beauty. And actually, the Food for Beauty Diet is so simple, and so easy to follow at home. It can be summed up as: eat half of your meal first in the form of raw fresh fruits and vegetables. After that eat what you want, provided what you want does not include gravies, whipped cream, candies and pastries. Here is a typical Food for Beauty diet menu for one day, such as I recommended to Mrs. Hamilton: Breakfast 1⁄2 grapefruit black coffee Lunch Fresh fruit salad (lemon juice instead of dressing) 1 tablespoon cottage cheese 1 rye crisp Dinner Hearts of lettuce 2 broiled lamb chops 1 portion Julienne carrots 1 portion string beans 1⁄2 grapefruit This Seven-Day Diet, combined with exercise, would show a difference of 4 to 7 pounds on the scales. Tip on Tables
When setting a table for dinner party remember to keep your centerpiece low so that the guests can see across it. Shallow, round bowls of clear modern American crystal with an arrangement of such stort-stemmed flowers as pansies or petunias are excellent for this purpose. Being simple and transparent the crystal harmonize with any color scheme. White candles are always appropriate, and contrast nicely with low flowers.

"Everyone can have beautiful hands," says Florence Pearsall, the popular model whose lovely hands are seen in many magazine and newspaper advertisements. She recently told Adelaide Hawly in an interview over the Columbia network how to keep your hands soft, supple and graceful. Here she is shown performing one of the hand exercises in her daily routine, which she recommends to you, too. It also includes opening and closing fists 25 times, bending and unbending each finger, then rotating them a dozen times, smoothing back your cuticles with a towel each time you dry your hands, using a bit of hand lotion after each drying, and keeping your nails meticulously manicured. The results, ladies, will be well worth your while.

A whole meal may be cooked for less than 2 cents electricity cost in the thermizer cooker in a modern electric range. The cooker has a capacity of 6 quarts and, in many models, is equipped with a cooker pan, 3-position trivet and special baking rack.

Designed to place homeownership within easy reach of the average wage earner, to stabilize interest rates, to improve the quality of housing and to provide a steady flow of private capital for home financing, the Federal Housing Administration's home-financing system provides a number of protective features to home buyers. Among the benefits which the FHA program offers the borrower are: 1. The low initial payment on the house. This is a minimum of 20 per cent, except in the case of newly constructed owner occupied houses valued at $6,000 or less where the down payment may be as low as 10 per cent. 2. The maintenance of uniformly low interest rates. FHA regulations establish this rate at a maximum of 41⁄2 per cent plus the mortgage insurance premium of one-half of 1 per cent. 3. The long term of repayment, which may be up to 20 or 25 years. 4. The inclusion of all charges in a regular monthly payment. These include interest, principal, insurance and taxes. 5. FHA's insistence on sound construction and location standards and neighborhood requirements, which assure, as far as possible, that the homes offered as security for insured mortgages are durably built in communities of established value and under general conditions that promise stability and usefulness of home and neighborhood over a long period of years. 6. The single long-term mortgage which wraps up in one package the whole home-mortgage debt, paid off on a monthly basis and therefore not subject to the same hazards as the old short-term mortgage usually renewable at exorbitant costs. 7. The assurance, largely a result of the FHA's careful scrutiny of the borrower's financial status, that the mortgage debt is safely within the mortgagor's capacity to pay.

Interesting Desserts Add Zip To Menus for Early Autumn Here are some lively recipes to add interest to early fall menus.
For an easy-to-prepare lunch, eon salad with a "different" dressing, combine equal parts of honey and lemon juice. Beat well and serve over slices of avocado pear and sections of grapefruit on crisp lettuce. Garnish with pamineto. Marshmallow Delight A surprise dessert that's attractive to see and delicious to eat is called Marshmallow Delight. This recipe makes eight to ten servings: 1⁄2 pound marshmallows 11⁄2 cups diced crushed pineapple 1 tablespoon sugar 1 pint whipping cream 1⁄2 cup pecan meats Cut marshmallows in fourths. (Dip shears in cold water, to prevent marshmallows from sticking, which makes the shears attractive.) Add pineapple and place in covered container in refrigerator overnight. Whip cream, add sugar and vanilla. Fold whipped cream into fruit and marshmallow mixture. Pour into freezing tray and place in chilling unit. Garnish each serving with a maraschino cherry and nuts. Tomato Anchovy Salad If you want a salad to make a meal in itself some noon or for a Sunday evening supper, try stuffed tomatoes with anchovies. For six servings use: 6 medium-sized tomatoes 2 tbsps finely chopped parsley 4 hard-cooked eggs 11⁄2 cup of mayonnaise Paprika 4 flat anchovies Chop the anchovies into fine pieces and mix with the finely chopped eggs and mayonnaise. Scald and peel the tomatoes. Scoop out the centers and fill with the anchovie mixture. Cover each one with the slice of tomato cut from the top and serve on lettuce leaves garnished with a slice of lemon and sprig of parsley. These should be chilled well in the frigidaire before serving. Puerto Rican Pudding This light, tasty dessert is a favorite in Puerto Rico today. It is said that nearly four hundred years ago the same dessert was served by the loyal townsmen of San Juan to Dutch invaders who had set fire to the city. The Dutch commander was so impressed by this gesture that he ordered all devastation in the city ceased. For Puerto Rican bread pudding you use: 2 cups warm milk 2 cups breadcrumbs 3 tablespoons butter 1⁄2 teaspoon salt 2 eggs 1⁄2 teaspoon vanilla 2 tablespoons melted butter 1/4 cup sugar. Deep baking dish. Scald milk; pour over breadcrumbs; add butter and salt. Cool. Mix sugar, salt and beaten eggs; add the milk and bread. Add butter and vanilla. Mix well. Pour into a greased pan. Place in moderate oven for 45 minutes. Serve hot or cold, as desired. Coffee Butterscotch Sauce The right dessert sauce often adds the final touch to a meal. Coffee butterscotch sauce provides a delicious flavor for puddings and ice cream. For this you need: 1 cup brown sugar 1⁄2 cup corn syrup 1 cutful brewed coffee 2 tablespoons butter 1⁄2 teaspoonful salt 1/4 teaspoonful vanilla Boil the sugar, coffee, salt and butter together for five minutes. Cool, add vanilla and serve. Cottage cheese may be the base for a countless number of interesting and tasty salad combinations. A mound of creamy cottage cheese surrounded by an assortment of colorful fruits or vegetables makes a perfect main dish especially for ladies' salad. Cottage Cheese Salad 3 cups cottage cheese 1 tablespoon cream 1 minced onion 2 tablespoons chopped chives or green pepper 2 tablespoons chopped pimiento 1⁄4 cup cream Paprika 2 cucumbers 1 medium-sized onion 2 large tomatoes 2 carrots French dressing Salad greens Rub mixing bowl with a clove of garlic. Add cottage cheese, salt and paprika. Fold in chopped chives, pimiento and chopped celery. Turn into bowl that has been rinsed in cold water; chill in refrigerator. Unmold on center of large salad plate, surround with watercress, thin cucumber slices, onion rings, carrot flowers, tomato wedges. Pass with French dressing. Serves 6. The cottage cheese mixture can be served in whole tomatoes in lettuce cups, topped with toasted almonds or peanuts-French dressing is served with it. The markets are filled with a wide variety of succulent vegetables suitable for salads-your choice of vegetables will depend upon the season.
What and Wherefore Of Daily Bread Is Explained
Some of us eat simply because we are hungry and others because we relish our food as a connoisseur of art enjoys a fine painting. In either case, it is wise for all of us to know something about these foods and why they are important to our diet. The draft examinations showed a large proportion of our young men to be undernourished. Investigators found that a great many of these cases were caused mainly by an ignorance of the simple essentials of a well-balanced diet. The body requires three types of material, to provide us vitamins and minerals, to provide fuel for energy and body warmth; fat and carbohydrate and these materials are variously distributed throughout the foods we eat. The body's use of each food material is interlocked, one with the other, and eliminating any one will upset the normal functioning. Proteins are the great body-building material. The substance of muscles and vital organs, the hair and skin consisty almost entirely of protein. When the diet is lacking in protein, the body cells waste away, and this particular substance is necessary to build up the body and muscle tissue and repair the parts of the body worn down by the wear and tear of our daily lives. Reserve supplies of protein are not stored up in the body, and so it is necessary to replenish amount every day. It is hard for anyone to judge down to the last gram or ounce just exactly how much protein or fuel foods each person needs and the quantities vary. For this reason, it is generally considered desirable to allow a certain surplus of protein above what may be the bare requirements. If we don't, this factor must come from some other source such as the body protein and muscle tissue themselves. When the body starts burning itself, then we become tired and run down. Vegetable foods are the original source of all protein, and we find the largest amounts in grains such as oats, wheat and corn. Legumes also have a good deal. Most of us, however, get our main source of this substance from foods such as meat, fish, eggs, gelatine, milk, etc. The animals eat the vegetable proteins and convert them into animal proteins, which is the way we obtain them. The word protein itself means primary or first. In foods, it is a term used to indicate a large number of related substances, all made by the chemical union of simpler substances containing nitrogen, called amino acids. There are some twenty-two different parts of protein, or amino acids, that have been identified to date. The best way to describe them is to consider them as letters of the alphabet. Different combinations are used to build up the various body proteins. Some of the "letters" are more essential than others, and their absence from the diet has injurious effects. Various foods supply different kinds of these materials. Few contain all the twenty-three amino acids. Most of our foods contain only a few, and in this way we obtain the proper assortment of the various "letters." For instance, plain gelatine is a pure protein and makes an excellent supplement to the proteins in cereal grains which are lacking in some of the essential ones. But gelatine cannot, itself, be used as a supplement for beans and peas is another example. These types are all inexpensive sources of proteins and easily within the reach of the ordinary purse. Health Rules We have all been reading a great deal lately about vitamins, which are extremely vital items in our diet. We must not, however, lose sight of the basic rules for good health that must be followed every day. With-out them, all the vitamins in the world will not keep the normal person fit.

Before you start fall housekeeping, have a supply of filing cards, a sharpened pencil, glue, wrapping paper, tags, string and boxes. Then you'll be ready, when drawers and closets are put back in order, to list their contents on a convenient card. When boxes of summer things are to be put away, wrap them well at once and label them immediately.

Wise Planning Of Home meals Is Patriotic
All is not guns and airplanes in national defense, for the ever-expanding defense program now reaches into every home through the national nutrition program. Wise meal planning has thus become not only a source of personal satisfaction, but also a mark of patriotism! The ever-ready to provide a nutritious mainstay for a luncheon or supper menu is the platter of tempting tomato caps shown in the photograph. The plumply stuffed with a well-seasoned rice mixture and served with a rich cheese sauce-a sauce so good that every last spoonful will be eaten! Cheese, tis principal ingredient, is recognized in the nutrition program as an important source for calcium, phosphorus and protein. To make the preparation of such cheese recipes easier, one manufactured has now placed on the market a new smoother, faster-melting type of cheese food. It comes in the economical family-size two-pound box, but with a difference! Taking his cue from a consumer survey, which revealed that women did not like the wooden cheese box that had to be pried open, this manufacturer has packaged his product in a paper board container that opens as easily as a candy box. The cover can also be slipped back on tightly to protect unused portions of the cheese from drying out when it is placed in the refrigerator. You will need 11⁄2 cups of the cheese food to prepare the recipe for the tomato cheese cups. The full recipe is given below: Tomato Cheese Cups (Serves Six) 6 large tomatoes 2 cups cooked rice (1⁄2 cup raw) 1⁄2 cup butter 2 tablespoons green pepper, chopped 1 teaspoon salt 1/4 cup flour 11⁄2 cups milk 11⁄2 cups smoothly-melting cheese food, grated 6 slices bacon Parsley Cut off tops of tomatoes, scoop out pulp into small bowl and turn tomatoes upside down on absorbent paper to drain. Combine cooked rice with tomato pulp. All one tablespoon melted butter, the green pepper and one teaspoon salt. Fill the drained tomato cups with the mixture and place them in a baking pan. Bake in moderate oven (350 degrees F.) for 15 minutes. Meanwhile, melt remaining 3 tablespoons butter in top of double boiler, add flour, remaining 1⁄2 teaspoon of salt and blend well. Add milk and cook, stirring constantly, until smooth and thick. Place over hot water, then add the grated cheese food and stir until it is melted. Broil bacon slices and roll into curls, securing each with a toothpick.
