Diary of a Beauty Authority
By HELENA RUBENSTEIN (On this column, offered as a special feature to our woman readers, the noted beauty authority explains how a woman can develop her beauty to its fullest extent.) NEW YORK-At what age does a woman's beauty achieve its greatest heights? This question was put to me today by a woman of forty who is considered one of society's most charming women and who is as eagerly sought after by leading hostesses as any young debutante of the season. My experience has proven that a woman can be beautiful at any age. As she develops and changes, her beauty develops and changes with her. The glowing vitality which makes her beautiful as a debutante becomes the vivid individuality which makes her outstanding as a young matron. And during the golden years of her maturity, these qualities are transformed into poise and gracious distinction which make many a gray-haired woman the center of attraction on social occasions. Youth is an experimental period. The young girl who comes to me is eager to try new colors, new coiffures. She spends many hours discovering new possibilities for herself. But the older woman has a tremendous advantage. She knows herself. She has studied her good points and her defects. Her beauty has a rich, fascinating quality. A becoming coiffure is one of the most important factors for the older woman. Silver-gray hair can be so striking and so lovely that she should make the most of it. Frequent shampoos, thorough brushing night and morning and a little brilliantine sprayed on, will give it a perfectly-groomed look. The coiffure itself should be simple and should emphasize the shape of the head to give a smart, youthful effect. Extreme hair styles are not wise. Hair should be so arranged as to make it a flattering frame for the face. Of equal importance to the beauty of an older woman is a fresh rosy skin. The secret of beauty for the more mature skin is to combine both stimulating and soothing elements in your daily treatments. Stimulation comes first to waken and freshen your skin. An herbal cleansing cream provides that effect. Next, while the skin is tingling, the relaxed contours and chin line must be braced and tightened with contour astringent. This should be patted briskly into the skin until absorbed. The skin is now ready for the soothing enriching effects of a night cream molded well into the skin with upstrokes on the face and long down-sweeping strokes on the neck and throat. If used before retiring, it should be left over-night. If you are going out, remove carefully and pat fragrant anti-wrinkle lotion over your face and throat to preserve the fine texture and softness of your skin. Not every older woman is aware of the extent to which make-up, wisely chosen and carefully applied, can enhance her beauty. She can paint her own cosmetic picture by using soft shades which tone in with her natural coloring. Glowing accents of lipstick and eye-shadow will highlight her best features. AFTERNOON DATE If it's a date with a soldier home on leave you will want to wear a very dressy dress. U. S. soldiers recently expressed the wish to see their best girls in soft feminine clothes, in contrast to the uniforms they themselves wear. This date dress, a New York creation, is of black velveteen with a ballerina skirt, gay with graduated bands of grosgrain ribbon in different colors.
Corduroy reefer of natural color in wide wale weave with green flannel bindings is the knobby number Mary Mason-who plays the title role in Columbia network's "Maudie's Diary" series-wears over her warm jersey frock for the big game of the season. Notice the hand-wrought silver buttons and the youthful green felt hat.
Knitted ensemble is white and gay peasant colors is the youthful and fetching outfit Sammie Hill, of the Columbia network's "Jones and I" series, plans to wear to football games and for skating this year. Her slim-lined, slightly gored skirt is fireman's red, and her white sweater has a cable stitched panel down the back and brightly embroidered tabs. New 32-inch length coat is this year's favorite for campus and sports wear. CBS actress Peggy Zinke of Columbia network's "Big Sister" shows chooses this double-breasted camel's hair model with raccoon collar and cuffs, for wear at football games this season.

Fill the hollowed center with sugar, baste the baking apple in its own juice and when done serve in a glass apple and top with a dash of whipped cream and sprinkle with cinnamon. You can tuck raisins into the center, too, while apples are baking. Fish Provides Grand Chance To 'Dress Up' Dinner Table By Phillip Lewis The fish obtainable in these parts is not only plentiful but of wonderful variety. It is both cheap and expensive. Personally, I'll take the lowly eel, flounder or catfish and in a short time a dish "fit for a king" can be on the table. But instead of a lowly fish let's look at the "tops" of fish found in Florida waters. The pompano, compared to meat, is no more in price, less trouble to prepare and a fish dinner now and then is also a treat to yourself and guests. This week we'll make a good fish dinner. And a dessert! Do not let a fancy name for a dessert scare you. DINNER FOR 4 Grapefruit With Crawfish Radishes Celery Fillet of Pompano a la Hollandaise Fresh Peas Potato Croquettes Torte Renversee Demi Grapefruit With Crawfish Secure two large grapefruit, cut in half crosswise, remove all seed carefully. Remove every other piece of fruit and in its place put a piece of Crawfish. Serve with mayonaise in centre with a few Capers sprinkled on top. Fillet of Pompano Secure a fair size Pompano, have it cut in fillets and then split again. (Save the skin and bones. Place in a large buttered pan. Pour fish stock made by boiling skin and bones over fish, add 1⁄2 cup Sherry or White wine, salt and pepper and steam for 10 to 15 minutes in well covered pan. Remove carefully and serve with Hollandaise Sauce. Hollandaise Sauce 2 egg yolks 1 tablespoon water 1⁄2 to 4 pound butter Lemon juice to taste Salt and pepper Put egg yolks, water, salt and pepper in top of double boiler, cook over boiling water until eggs start to thicken; add large pieces of butter, remove from fire; beat until butter melts. Return to fire, reheat carefully for a minute, remove. Add more butter, beat, return and cook till sauce starts to thicken; remove and add lemon juice. Do not over heat or cook too long or it will curdle. Pour over this fish and then sprinkle with Paprika. Potato Croquettes Boil and mash potatoes, add butter, salt and pepper. Roll in little croquettes then in flour and egg. Leave for about 10 minutes, fry in hot fat until brown. Put in oven to heat through. Torte Renversee 3 egg whites 2-3 cup sugar 1 cup almonds (ground) Beat egg whites stiff, not too dry, add sugar gradually, fold in ground nuts. Cover a baking sheet with brown paper, outline 8in. circles on paper and spread evenly within circles. Bake in oven 350 degrees for 15 minutes. To remove paper, dampen on the backs and remove carefully. Let sit in a cool place several hours then spread chocolate filling between layers, and on top. Chocolate Filling 1⁄2 cup butter 2-3 cup 4x sugar 1 egg yolk % pound semi - sweet chocolate, melted. Cream butter, add sugar gradually, add egg yolk and beat until smooth. Add cooled chocolate and blend. Southern Fried Chicken (Request) Secure Broilers, cut in 1⁄4s, sprinkle with salt and pepper. Flour twice well. Brown in lard on both sides. Cover with lid and let cook slowly % to 1 hour. Remove from pan, (keep chicken warm) strain off all surplus fat leaving all the brown flour in the pan. Empty contents of one can evaporated milk into pan. Season and let simmer until thick, do not let it boil or it will curdle. Pour over chicken. Serve hot with Currant or Guava Jelly. CUP CUSTARD GOOD Cup Custard (thrift cooker) 2 cups milk 2 eggs 1/4 cup sugar 1 teaspoon vanilla Nutmeg Beat eggs, add sugar, beat slightly. Add heated milk pour into custard cups. Heat cooker 10 minutes on "High" then place custards on rack in well cooker. Switch to "Low" heat and allow 25 to 30 minutes cooking time.
This Chicken Pie Is Quick, Easy to Make
Chicken pie in the south is as indispensible as snowshoes in the anartic. Miss Lois Culpepper home economist of the Florida Power and Light company concocts one with a sweet potato cover that is quick and easy: Quick Chicken Pie With Sweet Potato Biscuits 2 tablespoons butter 3 tablespoons flour 2 cans chicken soup 1 cup water 1⁄2 cup cooked celery 1⁄2 cup cooked carrots 1 tablespoon lemon juice Temperature 425 degrees. Time 15 to 20 minutes Melt the butter and then add the flour and blend them together thoroughly. Add the chicken noodle soup and the water and cook until thickened. Then add the cooked celery, cooked carrots, and the lemon juice. Put into a casserole dish and cover with the following sweet potato biscuit crust. Sweet Potato Biscuit Cover 1 cup sifted flour 2 teaspoons baking powder 11⁄2 teaspoons salt 2 tablespoons shortening 1 cup mashed sweet potatoes 3 tablespoons milk Sift the flour, baking powder, and salt together and then cut in the shortening. Add the mashed sweet potatoes. Add 3 tablespoons of milk to make a soft but not moist dough. Roll about 1⁄2inch thick and cut with a biscuit cutter.
