THE BRIDE'S COOK BOOK Cream Puffs and Curry Share Cooking Spotlight As Gables Brides Tell Favorite Recipes

By GRACE STONE HALL Oh, brides of my heart—my cooking heart—and heroines of the Riviera-Times Bride's Cook Book: you certainly are attracting the attention of "your public." Readers tell us they enjoy making cooking tests of your recipes just as you record them from week-to-week. One woman informed that she tried Mrs. Richard E. Davis' Never-Fail Rolls and—hold your breath—"They didn't fail!" she reported. Mrs. W. W. Cook Jr., the former Helen Lee Carpenter, whose home is at 109 Alhambra Circle, is our first guest bride for today. Although traditional Swedish dishes have been handed down in Mrs. Cook's family, she believes tropical adaptations are advisable, especially those utilizing characteristic fruits and vegetables of Florida as they are found in Coral Gables markets. Fascinating it is to find this bride of the year successfully to make cream puffs—and successful in making the tempting dessert which many an experienced homemaker hesitates to attempt. Here's Mrs. Cook's formula: To one cup of boiling water add one-half cup of shortening (Spry) and allow to come to a boil again. Add one cup of sifted flour, a pinch of salt, and stir 'til smooth. Remove from fire and when slightly cooled, add four eggs, one at a time, and beat well. Drop batter from tablespoon onto greased pan and bake at 450 degrees for 10 minutes and at 400 degrees for 25 minutes more. "With whipped cream or any of the prepared puddings as fillings, these puffs make a delicious dessert," says Mrs. Cook. * * * Mrs. Harry Van Riper (Betty Bronson Dilling) of 3804 S. W. 60th Court brought to her kitchen the heritage of generations of cooking skill handed down on her mother's side from the Morrill family of Morrill, Texas, a family widely known for their hospitality, their fruit orchards—and marvelous chicken curry. Fortunate are we today to have the original chicken curry recipe, tested by years of cooking—and eating—in many sections of the country. Brown one large onion, cut fine, in butter; add three tomatoes or one and a half cups of canned tomatoes, then one and a half cups of sweet milk, and bring to a boil. Add one teaspoon curry powder (or more, if you wish), a pinch of cayenne pepper and four teaspoons of cornstarch which has been mixed in a little cold milk. Strain and pour sauce over three pounds of chicken that has been either stewed or fried. Garnish platter with boiled rice, well done. Salt both curry and rice to taste. Mrs. Van Riper also gives us this recipe for "dither cake"—one made in a hurry, yet sure to be good: Sift, then measure one and three-quarters cups of flour. Add a quarter teaspoon of baking powder, half a teaspoon of salt, and sift again. Beat half a cup of butter until creamy, then add gradually one cup of sifted sugar, stirring constantly. Cream butter and sugar until fluffy, then beat in one egg. Melt two ounces of chocolate and when cooled slightly, add to the butter-sugar mixture. Divide flour into three parts, and three-quarters of a cup of milk into three parts. Add flour and milk alternately to the butter-sugar mixture, beating after each addition. Flavor with a teaspoon vanilla. Bake in 325-degree oven for about 45 minutes. Deliciously creamy, Mrs. Van Riper reports, is the seven-minute icing she uses for this cake—a recipe given her by her neighbor, Mrs. Fred Diestelhorst. Place two, unbeaten egg whites in top of double boiler, and add one a half cups of corn syrup and one-quarter teaspoon of cream of tartar. Beat for seven minutes while water is boiling in lower part of the double boiler.

BETWEEN US Dating Is Okay If No. 1 Girl Gives Consent

By NANCY MOTTRAM "Dear Nancy: The girl I've been going with has gone away to school. I asked her if she minded if I went out on dates and she said that she didn't care. But I don't think I should, even though it means a chance to go out with a girl I've asked before, and gotten "maybe" for an answer. Should I have other dates, since the girl who wears my ring is away, or should I go stag till she's home." As long as the gal who has your ring will be away for a number of months, and doesn't care if you have dates or not, you might have a try at asking other girls out. Since you would like to date someone else, and have asked her before, why not date her? In your letters to your college girl, tell her that you are having dates, and with whom. As long as she doesn't mind, and you mention it in your letters, there is no reason why not. "Dear Nancy: Is it proper for a group of girls to go to a dance together? Most of the girls where I live prefer doing this because in that way they don't have to dance with one boy all evening. What do you think?" It's an issue that many people think differently about, some approve and some definitely don't. But if it's a school dance, or one put on by a young people's group in a church, I think it's perfectly all right. As for the large public dances, not confined to any age group, it would depend on the custom in your city. Ordinarily, the practice of teen-age gals going to one of those affairs isn't looked upon with any great favor. You know the situation where you live, and it's your decision, but unless the dance is either in school, put on by a young people's group, or a sponsored club dance to which many are going stag, it isn't too good an idea. "Dear Nancy: There is a boy who is two years older than I am. I like him very much. He tells others he thinks I'm very pretty and that he likes me, but he pays no attention to me, except to talk to me or kid me. But when school is out, that's the last I see of him. I have known him for two years, and he's never asked me for a date. What must I do?" If he's just talked about you, and done nothing about dating you to tell you himself, it's time you acted. Next time your crowd has a party or some activity comes up where the girls ask their dates, ask him. If there's nothing planned for the future, get a gang together and plan a Christmas party, or a Winter outing. You can put your best foot forward, and prove that you can be interesting and fun on a date.
