Creating from Nature's own creations

By ERICA MEYER Staff Writer Jackie Filteau of SW 105th Avenue pulled several sprigs of Scotch Broom through her fingers, trying to shape them into the arched curve she wanted for her flower arrangement. "Make it do what you want it to do," floral design instructor George Wilson urged. "Don't be afraid to experiment." Wilson, of SW 131st Avenue, is a professional designer at Buning the Florist, 4800 Le Jeune Rd., in Coral Gables. He teaches design class there from 6:30 to 9:30 p.m. each Monday and at the Buning outlet at 15657 S. Dixie Hwy. from 7 p.m. to 10 p.m. each Tuesday. His two students Monday, July 19, were Jackie, a South Dade housewife and mother who hopes to go into floral design as a part-time job, and Pam Rindfuss, of SW 82nd Street, who is taking the course as vocational training. Wilson teaches from two to 10 students each class and they create two to four arrangements. He makes them try their skills on delicate roses, unusual exotic flowers and colorful pompoms and carnations. The creations Monday night were a formal arrangement with glossy red Anthuriums from Hawaii and a round, mixed bouquet with a combination of spring flowers. Wilson, who makes one design as an example and showers attention on each student - blossom by blossom throughout each arrangement, grew up around his aunt's florist shop. He got into professional designing when he was driving a truck for a florist and "they got busy. one day and told me to make something." He's been a professional designer for five years. Jackie, on the other hand, was on her sixth lesson Monday and Pam was on her first. "I love it," Jackie said. "I think it takes more talent than most people realize. There's a lot to it. I hope to go to work doing this when school starts and the kids are occupied." "The mechanical things are the only hard part to learn," Wilson said. "They are the foundation. After that you just use the natural contour and shape of the flower to create line. You are creating with something that is already beautiful." He stepped back to take a more distant view of Pam's first arrangement. She smiled nervously and fluffed up a fern-filled corner with her hand. "It's got a good balance, excellent," he praised. "There's just one opening, one gap." And then he picked up a bit of greenery and finished off the arrangement of Antherium, tiny leaves, Scotch Broom and fern. While working on her arrangement, Pam nicked her thumb with the sharp floral knife. Wilson provided a Bandaid and methiolate and then watched as Pam hesitantly picked up the knife again. "Don't get afraid of the knife now," he urged, demonstrating a proper grip on the sharp instrument. "You won't be able to take the time to be afraid of it later. You just have to handle it carefully." Within 10 minutes, Pam had created a rounded bouquet, with Wilson adding tiny buds "for depth." Asked about her first class, she smiled shyly. "I liked it. It was fun," she said with a note of faint surprise. "It was really an experience."
