Coral Gables Women Follow Fashions in Cooling Foods To Touch Up the Fading Appetite

Do you know what to serve for dinner or luncheon these hot days? Do you still swing to the meat and potato diet, with coffee and apple pie as a dessert, or do you do as a great many Gables housewives, look to fresh fruits, salads and frozen desserts to freshen up the appetite? Mrs. J. E. Duvall of the Junior Woman's Club uses fresh cantaloupe with the meat scoped out and filled with fresh fruits. "This can be hearty and served as a salad, which is a meal in itself, or the cantaloupe can be filled with ice cream for a cooling dessert" says this busy homemaker. Now that sugar is off the lists, desserts demanding that sweet may be indulged. Mrs. H. N. Rath offers pineapple-buttermilk sherbet that sounds tempting and at the same time very healthful. BUTTERMILK SHERBET One can crushed pineapple (No. 2 size), pinch of salt, 11⁄2 cups confectioners' sugar, 1 quart fresh buttermilk. Add sugar, salt and buttermilk to well drained pineapple. Pour in tray and freeze. Stirring in tray once during freezing improves texture. One tablespoon of vanilla may be added if desired. Makes one and one-quarter quarts. Mrs. Evan D. Roser, a past president of the Coral Gables Woman's Club offers this cooling sherbet which is easy to prepare. PAPAYA SHERBET Mix four cups of papaya pulp with two cups of sugar and juice of three lemons. Place in tray of electric refrigerator and freeze. Mrs. Louie Lanford, also a past president of the club, offers a one, two, three sherbet that sounds interesting. SOUTHERN SHERBET One cup water, 3⁄4 cup sugar, 1 banana, 1 orange, 1 lemon, 1 egg, salt. Beat egg, add sugar, water, crushed banana, juice and pulp of lemon and orange. Mix well and turn into tray of refrigerator. Stir twice during freezing. Mrs. O. A. Sandquist also a past president of the Coral Gables Woman's Club, offers this ginger ale ice cream which is usually served as accompaniment to a meat course. GINGERALE ICE Combine one cup granulated sugar, one cup of water and the grated rinds of one lemon and one orange. Stir until sugar dissolves. Boil five minutes. Strain and cool. Add juice of one lemon and one pint of ginger ale. Mix well. When partially frozen transfer mixture to a bowl and beat until light. Return to tray for second freezing. When frozen to a mush, again return to bowl and fold in stiffly beaten egg white. Return to tray for freezing solid. Mint or cherry garnish gives color.

President of the Coral Gables American Legion Auxiliary, who was elected president of the President's Council Monday night. The unit holds monthly meetings and serves the auxiliaries in the 10th district.

St. Theresa P-T. A. Plans Benefit Bridge for Tuesday

Working towards their Halloween festival, members of the Parent-Teachers Association of St. Theresa's school are planning a benefit bridge party to be held at 1:30 p.m. Tuesday at the home of Mrs. Benjamin C. LePointe, 700 Alhambra Circle. Mrs. Howard H. Gleason is party chairman. Mrs. Lawrence G. Lally is in charge of hospitality and will be assisted by Mrs. James Sottile, Jr., and Mrs. Harry N. Moss. Reservations may be made with Mrs. Cyril H. Haas, 48-5366. Mrs. Haas is president of the association.

For Summer's Stay

Mr. and Mrs. Charles Harting left this week for their annual summer's stay in West Bend, Wis.

Dr. L. D. Pankey, Family To Tour Southern States

Dr. L. D. Pankey left Sunday to join Mrs. Pankey and their children who have been visiting Mrs. Pankey's parents in Jacksonville. They will leave early this week on a tour of the Southern states including Virginia, the Carolinas and Washington, D. C. Mrs. Pankey and the children will spend the month of August at Little Switzerland, N. C., and Dr. Pankey will journey on to Boston, Mass., where he will give his now famous lecture, "Practice Management" for the seventh time, before the American Dental Ass'n convention.
