Hot Weather, Food Poisoning Go Hand in Hand Says Board

Hot weather, picnics, dutch suppers and FOOD POISONING often go hand in hand, the Florida State Board of Health said today in its seasonal warning to be more careful in handling certain standard "hot weather foods." A number of cases of food poisoning have already been reported, Folks are prone to give universal stand-bys such as ham, poultry, chicken and potato salads the blame, said the board, but rarely is the doubt in connection with possible spoilage and food-borne poisons. First on Menus These foods are nearly always first on menus when committees are preparing for church suppers, picnics and occasions when food is served in large portions. It was pointed out that very rarely are shrimp and crabmeat salads served at such gatherings. This is because the public realizes that these foods spoil easily and therefore may "poison." If the same respect were shown ham, poultry, salads and cream pastries, declared the State Board of Health, the food poison outbreaks would be rare. Prepare Same Day Do not prepare foods the day before using. Particularly those mixed with salad dressings. Potato salad for example. It is all right to boil the potatoes the day before using-but do not mix the salad proper until the last possible minute before packing the lunch. There are three ironclad rules to observe when serving these summer "favorites." which cause 75 per cent of the food poisoning upsets. Serve them HOT, or serve them COLD-never an in-between temperature-and eat immediately after preparation. Keep It Cold Standard temperature refrigeration is urged for these foods. The "bug" that causes stomach upsets can't reproduce when food is kept below 50 degrees. It was also stressed that persons working directly with food should be especially careful about abrasions, boils and pimples on the face and hands. The tiniest of these little skin conditions also contain billions of the bugs which will cause a certain poisoning in foods. Hence the importance of keeping hands thoroughly washed with soap and water-often.

Making Plans For Season At Gulfstream

Gulfstream Park will inaugurate Florida's 1947-48 winter racing season on the afternoon of Monday, December 1 for a 40-day season that continues through January 15. Dates for Miami's three thoroughbred strongholds have been assigned by the Florida State Racing Commission, allotting the opening of the season to Gulfstream Park, followed by Hialeah and Tropical Park. Shows Increase "Gulfstream Park, the only race track in the Miami area to show an increase last year over the previous season, is already planing for the winter ahead," said President James Donn of the beautiful Hallandale race course. "It remains my contention that the racing season, which now terminates past mid-April, should be pushed up, opening and closing at least 10 days earlier. This would eliminate conflict with northern tracks and be a boon to horsemen, and to the state treasury with a larger return from the mutuel windows. "The assignment of dates this winter, opening December 1, will find us doing everything possible to make our meeting even more successful than in the past, however. Until the government gives us a green light on construction we must go alog with our Club-house Terrace, although plans have been drawn for one of the most complete and beautiful structures on the American turf. The running strip will me improved with marl dredged from the in-field lake. There will be new features introduced to entertain our racing friends and facilities for their added convenience installed throughout the area."
