Vary your cookout recipes

Eating "out," be that porch, picnic ground campsite or beach is one of the most natural of summertime activities. Once warm weather has become established, families eat outside at any excuse. To keep that grill going, it's smart to vary the cookout menu as much as possible because charcoal flavor enhances many foods besides hot dogs and hamburgers. For a true change of pace, why not tempt the family with liver that's been brushed with herb butter, served with a savory tomato a sauce? Liver is a tender meat that cooks quickly. Once butter is added it will have enough moisture to cook easily. Corn on the cob can be foil-wrapped after butter and salting to start cooking even before you put on the liver. Salad is a simple item when lettuce heads are washed, dried and cut in wedges to be served with a sour cream and dill dressing. GRILLED LIVER 6 tablespoons butter 3/4 teaspoons marjoram 3/4 teaspoon rosemary 1 1/2 pounds beef liver, sliced 1/2-inch thick. Combine butter, marjoram and rosemary; heat until butter is melted. Remove membrane from liver, if necessary. Brush both sides of liver with herb butter. Place liver on broileer pan brushed with butter or on grill. Place under preheated broiler or over hot coals. Watch carefully as liver cooks very quickly (3 to 4 minutes on each side). Serve with Herb Tomato Sauce. Four to six servings. HERB SAUCE 1/4 cup chopped onion 2 tablespoons butter 1 can (8 oz.)tomato sauce 2 tablespoons firmly packed brown sugar 2 tablespoons vinegar 3/4 teaspoon marjoram 3/4 teaspoon rosemary Bacon, cooked and crumbled (optional) Saute green pepper and onion in butter. Add remaining ingredients. Bring to a boil, and simmer gently five minutes stirring occasionally. Serve warm. DILL DRESSING 1 tablespoon fresh lemon juice 1 teaspoon grated onion 1 teaspoon salt 1/4 teaspoon sugar 1/4 teaspoon dill weed 1/8 teaspoon pepper 1 cup dairy sour cream Combine lemon juice, onion, salt, sugar, dill weed and pepper. Fold in sour cream. Chill. Yield: about one cup.
