Poached fresh plums served with a custard sauce are a delectable summer treat. Besides being an elegant dessert, poached plums are practical... they can be made ahead and kept in the refrigerator several days.

Plum dandy treats for the summertime are quick and easy

One of the joys of summer is the arrival of fresh plums. From now through late September, our market will be laden with one colorful plum after another — in all, some 20 major varieties. Fresh plums will be plentiful this summer. You'll want to keep several on hand to snack on all summer long. Put a plum or two in the fruit bowl for a quick n' refreshing lift, but do store most fresh plums in the refrigerator because they can turn from ripe to over-ripe very quickly. Though always popular summer snacks, fresh plums are also delicious in many favorite ways. Try them in pies and tarts, sauces and salads, jams and jellies. For a sprightly morning eye-opener or anytime picker-upper, try an icy fresh plum dipped in a bit of sour cream and then into brown sugar. Plums in golden cream is another great way with this refreshing summer fruit. Fresh plums are gently poached, then topped with a creamy custard sauce. It's a summer treat to refresh any appetite... anytime. Poaching is a classic, yet easy, technique to use for tart-sweet plums and almost any summer fruit. Simply simmering fresh, unpeeled plums in any of a variety of liquids makes them taste even juicier and accents that special plum flavor and color. The basic poaching liquid is just water and sugar. But you could add lemon or orange peel, a vanilla bean, cinnamon stick, or cardamon seeds for variety. Dessert wines or fruit juices also make delicious poaching liquids. When buying fresh plums, select fruit that yields slightly to gentle pressure and that has good plum color for that particular variety. A slight softening at the tip is another indication of ripe fruit. Plums in golden cream 1 cup sugar 1 cup water 2 pounds fresh plums (about 12 plums) 2 cups milk 1/4 cup sugar 4 egg yolks, lightly beaten 1 teaspoon vanilla extract Combine sugar and a water in a large saucepan; cook over medium heat, stirring constantly, until sugar is dissolved. Add plums; poach until just tender, about 10 minutes. Chill plums in syrup. In saucepan, heat milk with sugar. Pour hot milk over yolks in a slow stream, beating briskly. Return to saucepan; continue cooking over low heat, stirring constantly, until custard thickens and coats a metal spoon, about seven to 10 minutes. Stir in vanilla; chill. To serve, drain plums; spoon into serving dishes. Serve with custard sauce. Makes six servings. Note: Reserve plum poaching liquid and use as a syrup over pancakes, waffles, French toast or mixed fresh fruit. Sliced Fresh Plums Sliced, spiced and sweetened, fresh plums are a delicious, super-easy dessert. Some fresh plum varieties are freestone and the pits pop out easily. Others are freestone enough to cut along the seam, twist in half, and cut the pit away from one side. For other plum varieties, including the popular Santa Rosa, it's best to slice into the pit and cut the fruit away in halves, slices or wedges. Try fresh plums sliced into this simple dessert: For each two cups of plum slices, sprinkle with 1/4 to 1/2 cup sugar (amount depends on tartness of plum) and add one to two tablespoons of kirsch or orange-flavored liqueur, or a whiff of cinnamon, allspice or mace. Chill well. Serve in bowls with heavy cream to pour over. Or, spoon the fruit and juice over pound cake, shortcake or ice cream.
