Cool it with a frozen crunch

Some like it hot, but others would rather sit in the shade when the thermometer reaches record high temperatures. No matter whether your idea of summer fun means fast-pace sets of tennis or lazy lounging in a hammock, you'll enjoy a cooling bit of Frozen Lemon Crunch. This refreshing frozen dessert will be a summer-long favorite. Frozen Lemon Crunch (8 Servings) 2 tablespoons butter | 2 cups corn flakes, crushed | 3 tablespoons brown sugar | 1/2 cup chopped nuts | 3 egg yolks | 1/2 cup sugar | 3 egg whites, stiffly beaten | 1/2 cup whipping cream, whipped Melt butter in heavy frying pan over medium heat. Add corn flakes, brown sugar, and nuts. Cook until sugar melts and caramelizes slightly. Line refrigerator tray with half the corn flake mixture. Beat egg yolks until light; then add 1/2 cup sugar. Cook over medium heat until thick and creamy. Stir in lemon juice; cool. Fold egg whites and whipped cream into lemon mixture and pour into refrigerator tray. Sprinkle remaining corn-flake mixture on top. Freeze until firm.
