World traveler returned to SD equipped to teach culinary arts

By ERICA MEYER Staff Writer "The only reason people here don't like to cook," Angela Gaivizzo says emphatically, "is that they don't know how. Cooking is more than just throwing things together." Angela, 29, of 2475 S. Bayshore Dr., loves to cook and she knows how. An ambassador's daughter who has sampled the great cuisines of the world, Angela knows how to cook most of them and she is starting a catering service in South Dade to display her expertise. She hopes to teach a culinary arts class at Miami Dade Community College South this fall and she is already teaching in her home each Tuesday. "Cooking should be shared," she advised. "It can be a family thing, a fun thing. Children should be shown good food early. "People could train their kids more to work with the cooking. It is like music or anything else. If you train kids to listen to Mozart for fun when they are little, they will grow up loving it." Angela has been in the United States — and in South Dade — almost two years. When she got here, she didn't know any English and now she has mastered that, along with Portugese, Spanish, French and Italian. She ran a small restaurant (Angela's Kitchen) in Coconut Grove for almost a year, but has given that up to expand her catering and tutoring. Her classes go from basics to exotic recipes and so does her catering menu — for details on either, call 856-5377. Meanwhile, Angela has offered bits from both. Asked for a couple of hints from her classes, she said most people cook vegetables too long, depriving them of taste and vitamins. "Vegetables should be al dente (firm)," she said. "They should be just steamed quickly or deep fried, like in a wok." Angela revealed, also, that the secret to recipes involving whipped egg whites (meringue, souffles, mousse) is that the eggs should be at room temperature and that a spotlessly clean whisk should be used to beat them. An extra hint for flambe desserts is to heat the brandy, or what ever alcohol you are flaming, before you try to light it. "Sometimes I light the brandy or whatever while it is still in the container I heated it in," Angela explained, "and then I can pour it flaming on top of the dessert." And speaking of desserts, Angela offered this recipe for Peaches Cardinale from her catering menu: 6- Fresh peaches, cut in half and pitted 1 cup of water 1/2 cup of champagne (optional — you can substitute another 1/2 cup of water) 1/4 cup of sugar Simmer the peaches in the water, champagne and sugar for five minutes. Take peaches out of the syrup and add raspberry sauce: 1 package frozen raspberries 1 cup whipped cream Mix the raspberries into the whipped cream and cover the peaches with the combination. Let it cool for two hours before serving. The dessert can be topped with a little extra whipped cream if desired. "It is really pretty when it's made up," Angela added. "The orange peaches and the pink mousse combine and it tastes delicious."
