Best of all, it makes an occasion of any moment ... goes with any food; before, during, or after meals, or without meals. Choose the type that best suits your taste, makes your life most joyous: "Brut" is the driest; "Sec" (Dry) is really semi-dry or medium-sweet; and "Doux" (Sweet) is the sweetest Champagne of all. Most important, look for "California" on the label. Pink Champagne, sometimes labeled Rose Champagne or Sparkling Rose, is usually a little less dry than Champagne. Pink in color, it is a wine for gay occasions, perfect for luncheons or in the afternoon. Sparkling Burgundy is rich, bubbling, ruby-red champagne.
