Long distance

MARS HOTLINE Like dialing another planet . . . without a long distance charge . . . Well, perhaps the state of the telephone art isn't quite that advanced, but South Dade residents are experiencing the next best thing when they dial 854-2222. Callers to that number are currently being updated on the Viking spacecraft mission to the planet Mars. The above number — actually a five line rotary — is that of the "Mars Hotline" at the Miami Museum of Science and Space Transit Planetarium. J. F. Horkheimer, planetarium director and genius in residence, thought the automatic answering sets the museum has been leasing from Southern Bell could be made into a visually attractive display. In addition to daily Viking Lander reports, callers to the 854-2222 hotline also receive information about Planetarium show times.

I was recently given a large bowl of quail eggs, and as with most game birds, the producers of these miniatures are a little drier than domestic fowl so I usually serve them in a sauce. The following recipe preserves their flavor nicely. Quail in cream sauce 4 whole quail, cleaned and trussed 3 cups heavy cream Salt and pepper Juice from half a lemon 1/2 cup dry white wine Pinch nutmeg 1/2 cup butter 3 tablespoons flour Fresh chopped dill for garnish Sprinkle birds with salt and pepper then, using a large skillet, saute them on all sides in the butter. Remove birds to deep oven dish and set skillet aside. Pour cream over birds and bake, covered, in a preheated 350 degree oven for 35 minutes. Then remove birds to a deep serving dish to keep warm. Sprinkle flour into skillet and stir until well blended, pour in cream from baking dish, stir, add white wine, lemon juice and nutmeg, adjust seasoning and stir until smooth and thickened. Pour sauce over quail, sprinkle with fresh chopped dill as a garnish and serve hot. Serve with fresh cranberry sauce and puree of carrots and parsnips.

The Welcome Wagon Club of Coral Gables is bringing in the fall season with many events. On Thursday, Sept. 2, the first luncheon of the fall season will be held at the Chez Vendome in the David William Hotel, 700 Biltmore Way.
